Apple Cider Monkey Bread Recipe

When I was a kids I remember making Monkey Bread with my grandma. Actually she still makes Monkey Bread but now she makes it my son. He LOVES it. Here is a fall spin in the classic treat, Apple Cider Monkey Bread.

To begin, prepare sweet dough which will need to chill for 4-6 hours. In a large bowl dissolve warm water and yeast. Mix in 2 cups flour, milk, eggs, salt, sugar and the melted butter. Mix well until soft ball forms and then add remaining flour a cup at a time to form a stiff ball of dough. Chill for 6 hours.

While dough is chilling, prepare apple cider caramel. In a small saucepan add cornstarch and cider, dissolve over low heat. Add one cup sugar, ½ cup shortening, pinch of salt and 1 tsp apple pie spice to saucepan. Bring to a boil, mixing the entire time. Caramel should thicken after 3-5 minutes. Remove from heat, set aside.

After 6 hours remove dough from fridge and turn out onto a lightly floured surface. To remove air pockets from the dough, punch it a couple times till deflated. Prepare a greased bundt pan and two bowls, one with ½ cup melted butter and the other with 1 cup sugar and 1 tbsp apple pie spice mixed together.

Pinch off about a tablespoon of dough and roll into a ball. Repeat this process until the entire ball of dough has been made into smaller balls– about 45-50 balls.
Drop dough balls into melted butter and then roll around in the sugar and spice mix. From there add balls to greased bundt pan till you’ve done this with all the dough balls. There should be enough dough balls to fill the bundt pan halfway up, leaving room for the dough to rise.
If apple cider caramel has stiffened up, place it in microwave for ten seconds till it is slightly runny. Pour half of the apple cider mixture over the dough balls in the bundt pan. Place monkey

Place monkey bread in oven for 35 minutes at 350F. If the caramel covered dough starts to brown you can cover it with tin foil to prevent burning.
  7. Monkey Bread will have risen to fill the entire bundt pan. Remove from oven to cool. Once cooled, carefully turn bundt over onto a platter or tray and pour remaining apple cider caramel over the top. You can also leave some of the caramel to the side for dipping.
  8. To serve, simply pull apart dough balls with a fork and enjoy as is or dunk into extra apple cider caramel!
