Baseball season is upon us which means late nights, most weekends at the ball field and little time to make dinner. Kaden gets home from school and has about 45 minutes before we have to leave for his ball games. He is ALWAYS hungry when he gets home from school so I always try to have dinner ready. Last night I made Chicken Meatball Sub in less than 10 minutes using Aidells® Meatballs Italian Style with Mozzarella. Since it had mozzarella it seemed perfect for a sub. Since they are already pre-cooked I just added a tiny bit of EVOO to a small skillet pan and tossed the meatballs in once the oil was hot.
I covered them and let them warm up for about 4 minutes. About every minute I gave the song a swirl to heat them on all sides. After the 4 minutes I added the sauce and let them simmer for about 6 minutes. You could add more sauce and let it reduce more if you like. I had 10 minutes to put a hot dinner on the table so this was perfect for me.
I grabbed about 5 of the meatballs and stuffed them into a roll I had also bought at Meijer and pair the sub with chips.
Looks yummy, right? It was delicious! It was great and one pack of Aidells® Meatballs made 4 subs which was perfect for my family. It took 10 minutes and cost about $10 to make.
